Think beef from Gympie, chicken from Moya Valley, pork from Bangalow, Mooloolaba prawns and scallops from Hervey Bay, as well as cheeses and vegetables sourced from local hinterland suppliers.
Pork belly, fresh pineapple salsa with pancetta and char siu sauce and pan-seared Mooloolaba prawns highlight the starter menu. Main course favourites include handmade ricotta gnocchi and Moya Valley cajun spatchcock. Luscious vanilla panacotta with hibiscus jelly, honeycomb and pistachio dust is a beautiful finish from Head Chef Andrew Wilcox.
